Excitable and fine mousse. Pure, fragrant citrus aroma with very subtle yeasty autolytic character and the focus is still the citrus fruit – clementine and grapefruit. Nice chalky texture is the foundation for crisp, pure citrus, lots of freshness and tension and just enough creamy texture to balance. Not particularly intense on the mid palate but harmonious and, it seems, deliberately fruit-focused. Tastes almost sweet on the finish even though it is Extra Brut.

A brand new cuvée, Ayala's 2018 Blanc de Blancs A18 is entirely crafted with Chardonnay sourced in the villages of Chuoilly, Cramant, Le Mesnil-sur-Oger and Oger for the grand crus and Cuis and Bisseuils for the premier crus. Revealing a delicate, sweet bouquet of jasmine, brioche, pastry, confit citrus and flowers, it's round, harmonious, moderately weighted and seamless, concluding with a chalky, delicate finish with lemon-oil inflections. Dosage: five grams per liter.

The 2018 viticultural year: A rainy winter and a mild spring were followed by a dry, sunny summer, heralding optimal conditions for an early harvest. This meant that grapes were plentiful and in near-perfect condition, particularly the Chardonnays. Despite a warm year, the region’s finest Terroirs showed themselves at their very best, thanks to the cool clay sub-soils in the Champagne region. Bright, very fine and dynamic bubbles. On the nose, great elegance with notes of pear, grapefruit, jasmine and honey. The palate, forthright and open, notes of blood orange and pastry. Vivacity, beautiful bitter notes and chalky minerality.
